Countryman Challenge in association with Sporting Shooter magazine

In line with the Countryman theme of the event we have asked top Game Chef Mark Gilchrist to cater the event.

Using exclusively British ingredients, Mark has created a menu of filling wholesome and healthy fare with a strong sporting theme.

All of Mark's cooking makes use of the best quality ingredients in a no compromise approach; for example the Pork sausages are made of 75% shoulder of pork, there is no mechanically recovered meat or cuts of meat you have never heard of, just good honest food without the need for any preservatives. The venison sausage rolls are 70% meat with hand made puff pastry casings. All pies and Brownies are made from scratch in his own kitchen as are the pasta sauces which are made to his own recipe from Tomato, basil and parmesan cheese.
